Abstract

[fr] A l’heure actuelle, la personnalisation représente à la fois une attente forte de la part des consommateurs et une source d’opportunités pour le développement de nouveaux produits. En réponse à cette demande croissante, ce projet présente l’application d’une technologie innovante d’impression laser sur un support alimentaire original, à savoir le chocolat. La personnalisation en elle-même repose sur l’apparition et la maîtrise d’un blanchiment sélectif en surface de napolitains. Une approche globale de la conception du produit est à cet égard adoptée dès la définition d’un cahier des charges, à travers les « 5 S » de la sécurité, de la santé, de la satisfaction, du service et de la société.

Au départ d’un prototype, la technologie a été ajustée par essai/erreur, ensuite par la compréhension et la détermination des principaux paramètres influençant la qualité de l’impression. Une série de recherches et d’analyses complémentaires ont en outre conduit à caractériser le produit fini et garantir sa sécurité. Enfin, l’élaboration d’un packaging ainsi que la définition et la mise en œuvre d’une stratégie marketing ont contribué à positionner les chocolats personnalisés sur le marché cible et d’en envisager le lancement commercial.

Dans une vision prospective, des études ultérieures devraient permettre l’automatisation du process et dans ce sens, une meilleure productivité. L’offre et la stratégie marketing mériteraient par ailleurs d’être affinées par l’intermédiaire d’une collaboration avec des experts du domaine. Un grand potentiel réside finalement dans l’accompagnement du projet au travers de la transition numérique et un engagement profond en matière de développement durable.

[en] At this time, personalization represents a high expectation of consumers and a source of opportunities for the development of new products. In response to this growing demand, this project presents the application of an innovative laser printing technology on an original food medium, namely chocolate. The personalization itself rests on the appearance and control of a selective bleaching on the surface of neapolitans. In this respect, a comprehensive five-fold approach to the product design is adopted as soon as specifications are drawn up, specifically safety, health, satisfaction, service and society.

Starting from a prototype, the technology has been adjusted by trial and error, then by understanding and determining the main parameters affecting the printing quality. A series of complementary research and analyses have also led to the characterization of the finished product and to guarantee its safety. Finally, the creation of a packaging as well as the definition and implementation of a marketing strategy have contributed to position the personalized chocolates on the target market and to consider the commercial launch.

In a forward-looking vision, further studies should enable the process automation and in this sense, a better productivity. In addition, the offering and the marketing strategy would deserve to be refined through collaboration with experts in the field. A great potential eventually lies in supporting the project through the digital transition and in a deep commitment to sustainable development.
