Abstract
[en] The aim of the present master thesis is to improve the stability of the brewing process of the Jupille brewery through a detailed process analysis. The goal is to apply a continuous improvement strategy so as to develop sustainable solutions concerning recurrent issues observed in the brewery.
The methodology of this work follows the “Plan-Do-Check-Act” theory of improvement, that is part of the AB-Inbev global management technique, and is thus mainly based on data collected during the manufacturing process. The work focuses on the warm block (brewing process) and on the cold block (fermentation process) of the brewery. The process stability is mainly assessed through its duration.
The actions performed during this work have had a large impact on the stability objectives of the plant, which is expressed through the Brewery beer consistency Index (BCI). A 16 % improvement was observed on this key performance index. What is more, the solutions implemented should have a durable impact on the productivity of the brewery.
[fr] L’objectif de ce travail de fin d’étude est d’améliorer la stabilité du procédé de brassage de la brasserie de Jupille en se basant sur une analyse détaillée du procédé. Le but est d’appliquer une stratégie d’amélioration continue afin de développer des solutions durables aux problèmes récurrents observés dans la brasserie.
La méthodologie de ce travail suit la théorie d’amélioration « Plan-Do-Check-Act », qui fait partie de la stratégie de gestion d’AB-Inbev, et se base donc en grande partie sur l’analyse des données enregistrées durant le procédé de fabrication. Ce travail se consacre principalement à l’étude du bloc chaud (procédé de brassage) et du bloc froid (procédé de fermentation) de la brasserie. La stabilité du procédé est principalement mesurée via sa durée.
Les actions réalisées durant ce travail ont eu un grand impact positif sur les objectifs de stabilité de l’usine, exprimés à travers le « Brewery beer Consistency Index » (BCI). Une amélioration de 16 % de cet indice a été observée sur la durée du travail. De plus, les solutions apportées devraient avoir un impact durable sur la productivité de la brasserie.
